I haven’t done one of these posts in a really long time. I always start the day with the intentions of taking photos of my meals and usually forget after breakfast. I did pretty good this time minus my snacks…
Breakfast – two fried eggs on top of leftover roasted sweet potatoes and zucchini with avocado and hot sauce
Lunch – leftover spaghetti squash bake that had ground beef, bacon and green peppers with some spices (I sort of followed this recipe), spinach salad with a peach, olives and homemade dressing and a piece of Enjoy Life chocolate (not pictured)
Snack – apple with almond butter (no picture)
Dinner – salmon with homemade pesto (basil from my garden!), purple potato and green bean salad (both veggies from the farmer’s market) and leftover fried brown rice
Lately my stomach hasn’t been feeling 100% and has been reminding me of how I used to feel before eating more Paleo/clean. I’m not sure if it’s from the grains or dairy that I’ve been including more often so I’m trying really hard to cut back again. I’ve probably mentioned this before but one of the keys for me and Joe throughout the week is to always cook extra so we can have leftovers. I usually try to make as much as I can on Sunday or Tuesday (when I’m off work) to last us most of the week. Especially now that Enzo can eat our veggies and meat too, I like to make sure I have enough on hand. Sweet potatoes always go the fastest. 🙂
