Since the weather has slowly but steadily been creeping up, Joe and I have been grilling as much as possible to avoid turning the oven on. And when I say Joe and I, I really mean Joe since I never touch the grill… My Mom got us this Weber grill basket maybe 4 years ago and we use it almost every night we are grilling. It’s great for any kind of veggie you can think of. Lately, I’ve been on a grilled potato kick. They get nice and crispy and kind of taste like home fries you might get at a breakfast restaurant. Smoked paprika is also one of my favorite spices and goes so well with potatoes. I got mine at Whole Foods but I think you should be able to find it at most large grocery stores either in the spice section or the bulk section.
We served the potatoes with this short rib recipe. I haven’t made short ribs in a really long time and it turned out truly delicious. I didn’t have any fish sauce and used apple cider vinegar instead of coconut vinegar. I also cooked up some brown rice in homemade beef broth and butter and topped our meal off with avocado. Trying to add some additional calories to my meals to up the baby weight!
Grilled Smoked Paprika Potatoes Recipe
Ingredients
- gold potatoes (or other potatoes of choice)
- Olive oil
- Smoked paprika
- Garlic powder
- Salt and pepper
Directions
- Wash and cut potatoes into small bite-size pieces. Place in grill basket.
- Coat liberally in olive oil and season to taste with smoked paprika garlic powder salt and pepper.
- Grill over medium-high heat for about 20-30 minutes stirring every 5-7 minutes until potatoes are cooked through.
