Paleo St. Patrick’s Day Recipes

Hey all! I hope everyone is having a wonderful week so far. We had a pretty dreary weekend here in Austin, but this week is starting to shape up a little better. SXSW is going on right now and I’m sure a lot of local Austinites are hoping for bad weather to deter more people from moving here! Since I’m still new and am a transplant, I can’t say I blame anyone for moving to this place. It’s a great city with so much to offer!

UW_ButterHalfMuralOne thing that Joe and I like about Austin is all of the cool photo spots. There are so many unique murals, buildings or landmarks that make for great photography. Next weekend we’re doing our own photo tour of Austin. Joe mapped out all the best spots and we’re going to act like tourists for the day and get some great shots. I’ll be sure to post some photos once we go.

Now on to St. Patrick’s Day! This may be one of my favorite holidays simply because I love corned beef and cabbage and anything with a mint/chocolate combo. This day gives me an excuse to eat both! Even when I was a little kid, I would down plates of corned beef, boiled cabbage and steamed potatoes. Maybe it’s my Irish heritage, maybe I’m just weird, who knows! I usually save this special meal for once a year. The recipe I use (my Dad’s who I think got it from my great-grandmother) takes some time to make but it’s not too difficult. I’m going to look for a nitrate-free corned beef at Whole Foods since I won’t have time to brine my own brisket this time around.

St-Pats-hatI already know I’ll be using the leftovers throughout the week and will for sure be making corned beef hash and these Corned-Beef Cabbage Rolls. For the sides I’ll be boiling cabbage and potatoes topped with grass-fed butter. Going to be delicious!

Those would be delicious topped with some coconut milk ice cream. I’m already drooling thinking about it! It’s definitely not Paleo, but a green beer couldn’t hurt either. 🙂
