Below is an example of what I ate as a vegan breastfeeding mama. I try to stick to whole vegan foods as much as I can throughout the day to keep me fueled and full. I hope this gives you some food inspiration!

For breakfast, I had a big bowl of fruit that included a banana, pear, raspberries, blueberries and blackberries. I topped it off with shredded coconut and almond butter. I also drank some warm water with half a lemon squeezed in.

It was Sunday which is when I do most of my meal prepping. For snacks at school for the kids I make nut-free energy balls (I used this recipe this time). I just mixed everything in a bowl, rolled them into balls and stuck them in the freezer. It was so easy! I snacked on one as I was making them.

I also had some ginger tea. This is my favorite herbal tea. It’s so good!

While I was making the kid’s lunches, I snacked on a few dried mango (which I put as their “treat” in their lunch boxes.) They are so addicting!

This week for lunch, Enzo had mashed black beans (already made from a can), dried mango, cucumbers, hummus, orange bell peppers, a clementine and pomegranate seeds. I also add gluten-free crackers the morning of otherwise they get smooshy in the fridge. Emilia is not as keen on veggies as Enzo is so I just put the black beans, hummus, pomegranate seeds, and orange bell peppers (which she’ll sometimes eat). Then I’ll give her the same crackers.

It was a snacking kind of day for me. While getting the kids and Joe some lunch that day, I had some Siete grain-free tortilla chips and some leftover pre-made guac we had.

I also had a bowl of leftover lentil and veggie soup. I used this recipe. So easy, healthy and good!

I went on a run in the early afternoon which I don’t really do much but it was so nice outside (almost 80 degrees in December!). My stamina for running is really low right now but I would like to build it back up. I was super hungry when I got home so I made a smoothie with banana, frozen blueberries, almond milk, peanut butter, spinach, Amazing Greens powder, SunWarrior Protein Powder and hemp seeds. Lots of protein and fat along with my daily greens!

For dinner we had the Beyond Meat sausages. Definitely a treat around our house as they are a little pricey and not necessarily the healthiest but better then regular sausage in my opinion. 🙂 Also had some wild rice that I pulled from my freezer, roasted sweet potatoes, cauliflower and Brussels sprouts along with some spinach for good measure. The kids LOVE those sausages.

Some nights I have a snack before bed and tonight was one of those. I had some Silk unsweetened almondmilk yogurt, homemade granola (I used this recipe. I always make a huge batch of granola because we go through it like crazy) and blueberries. By far my fav bedtime snack.
