Butternut Squash, Fig and Spinach Pizza

Eating a plant-based diet doesn’t mean you have to give up your favorite pizza! Before eating vegan we used to make this pizza combination frequently but used goat cheese and sometimes added bacon. By simply removing the bacon and using a vegan cheese, we can still have this yummy dish. I made my own pizza crust using a mixture of whole wheat and all purpose flour, but you could easily buy a premade dough (just look for eggs or dairy in the ingredients and try to find one without). I made this recipe and it was pretty quick. Enzo loves helping me make dough because he gets to put his hands in it and play when it’s time to knead. He usually does that part for me while I clean up so it works out well!

Butternut squash is one of my favorite roasted veggies and it goes really well with the sweet fig jam. I actually made my own a while ago and froze it but we usually just buy it from the store. For the cheese I would normally buy the Follow Your Heart brand of vegan mozzarella (it has the best flavor of any vegan cheese I’ve tried). But since Joe requested this pizza specifically for his birthday dinner, I made my own cashew mozzarella. It was a little labor intensive so not sure I would make it on a regular basis, but it was a nice treat. I have seen vegan mozzarella at Whole Foods but haven’t tried it yet.

If you’re trying to incorporate more meatless recipes into your diet, I highly recommend this! You could even make a gluten-free or grain-free pizza crust if needed. Enjoy! 🙂

Ingredients

  • 175g self-raising flour
  • 50g margarine
  • 50g caster sugar
  • 2 Medium eggs
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 200g chocolate

Optional

  • sugar (a sprinkling for a crunchy top)

Directions

Step 1
Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.

Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients.

Mix well until it is lump free and then break the chocolate into small pieces and add them.

Step 2
Pour the muffin mixture into a muffin tin filling each mould up to two thirds full.

Place a block of chocolate into the middle of each muffin. Then sprinkle some sugar over the top of each.

Step 3
Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.

Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked!

Allow to cool for at least 5 minutes before eating.
