I am obsessed with salad and grain bowls. They are super quick and easy to make and are very customizable based on what you have on hand. Tahini dressing has become my all-time favorite sauce for everything. Tahini can be a little pricey, however I just found some on Amazon for about $12 for two containers which is the best deal I’ve found so far. Unfortunately it doesn’t last long in our house because I make this dressing every week and also make homemade hummus with the tahini. It’s so good!
I haven’t used pomegranates in about a year. When I was making this recipe I had to do a YouTube search for how to get the seeds out. Enzo helped me and he devoured an entire pomegranate and wanted more. Watch this video to quickly learn how to get your pomegranate seeds.
I used this sprouted crimson lentils, wild rice and quinoa blend from Floating Leaf that I found at Costco for our bowls. It’s really good but your favorite grain such as quinoa, rice or farro would work well in this bowl. Hope you like it as much as we did!
Ingredients
- 175g self-raising flour
- 50g margarine
- 50g caster sugar
- 2 Medium eggs
- 4 tablespoons milk
- 1 teaspoon vanilla extract
- 200g chocolate
Optional
- sugar (a sprinkling for a crunchy top)
Directions

Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.
Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients. Mix well until it is lump free and then break the chocolate into small pieces and add them. |

Pour the muffin mixture into a muffin tin filling each mould up to two thirds full.
Place a block of chocolate into the middle of each muffin. Then sprinkle some sugar over the top of each. |

Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.
Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked! Allow to cool for at least 5 minutes before eating. |
