Time for another fabulous “What I Ate Today” post! Entering the third trimester and I’m still feeling good physically and able to eat pretty healthy the majority of the time. My willpower is slowly becoming what it once was before pregnancy which is nice.
Breakfast was two fried eggs with hot sauce, avocado, strawberries and blueberries. Lucky I took the picture before I finished it all!
For a morning snack at work I had a green apple and some crunchy almond butter.
Homemade Paleo pizza! Probably one of the best pizzas I’ve made in a while. I used this crust recipe: https://paleospirit.com/2014/paleo-pizza-crust-recipe/, topped with homemade pesto (just a blend of fresh basil, garlic power, walnuts, olive oil, salt and pepper), grilled zucchini and eggplant and organic mozzarella. Seriously delicious!
Afternoon snack…salted cashews. Completely addicted right now. I tried having the unsalted kind this week and it wasn’t nearly as good.
Dinner was a grilled bunless burger, roasted sweet potatoes and green peppers and leftover grilled eggplant and zucchini.
Not pictured: For dessert I had a piece of homemade baklava that a friend made and brought over. The best baklava I’ve ever had! Not Paleo but worth every bite, it was sooo tasty!
