I’m way past due for a recipe post! Before starting the Paleo diet, I almost always ordered quesadillas at Mexican restaurants. Now my go-to is usually fajitas, a salad or tacos with gluten-free corn tortillas on occasion. I found these awesome non-GMO, sprouted corn tortillas at our grocery store and devoured them. Unfortunately I haven’t seen them again! I look every time I go to the store only to be disappointed once again. For now, I guess I’ll just have to reminisce until I find them again or have the energy to make homemade tortillas. I’ve found other gluten-free tortillas in the store but they tend to have a lot of weird ingredients in them.
Joe and I had such an awesome weekend. We had friends visiting us from Omaha which is always so much fun. We explored South Congress, had some delicious gelato from Dolce Neve (our all-time favorite), played numerous rounds of Cranium, attended church where our favorite singer came back from hiatus, had a great brunch at Takoba, a not-so-great dinner experience at Rio’s Brazilian Cafe, a beautiful view at Mount Bonnell (even though it was too cloudy to see the sunset), some intense competition at Top Golf and an overall great time with good friends.
We love having visitors and getting to show them around Austin. It’s always so hard to figure out what to do, especially where to eat, because there are so many awesome choices! But it’s always fun to get to be a tourist for a bit in our own city and enjoy everything Austin has to offer. Especially before sweet baby boy arrives. 🙂

Sausage and Egg Quesadillas Recipe
Ingredients
- eggs
- spinach (chopped)
- ground sausage
- Shredded cheddar cheese
- Paleo or gluten-free tortillas
- Guacamole salsa and hot sauce
- Salt/pepper
- Coconut oil or bacon grease
Directions
- Heat a medium pan over medium-high heat. Add the ground sausage and cook until completely done.
- When the sausage is almost done heat another medium pan over medium heat. Whisk the eggs with the spinach salt and pepper. Add coconut oil or bacon grease to the pan and pour in the eggs. Scramble the eggs as desired.
- Once the eggs and sausage are done cooking start assembling your quesadillas. Top one tortilla with a layer of cheese eggs/spinach sausage and cheese. Place other tortilla on top. Repeat with remaining ingredients.
- Wipe out the pan you used for eggs and reheat to medium-low. Add quesadillas (as many as will fit in the pan) and cook for a few minutes on each side until the tortillas are crisp and the cheese has melted.
- Cut your quesadillas and serve with guacamole salsa and hot sauce if desired. Enjoy!
