What I Ate Today

Happy Thanksgiving! I hope you truly have a blessed day with family and friends and are able to enjoy some delicious food (Paleo or not!). I can honestly say that everything I’m making will be 100% Paleo/Primal. Very excited about that. 🙂 I have a quick “What I Ate Today”  post for you. I hope it can inspire you for those days when you just aren’t sure what to eat or are sick of the same old thing. This day was a pretty snacky day for me. Some days I don’t snack at all, some days I just can’t stop. I listen to my body and if I’m hungry, I eat, plain and simple. Compared to my other similar post, this day is a lot more Paleo-friendly.

Breakfast: Two eggs fried in coconut oil with hot sauce, smoothie (using my NutriBullet) that had spinach, frozen banana, pumpkin, flax seed oil, cinnamon, cocoa powder and coconut water (my favorite combo right now, tastes like a pumpkin chocolate shake).

Almonds

Mid-morning snack: a handful of raw almonds (I always have these at my desk at work).

Pork Lunch

Lunch: Leftover shredded pork (put a whole pork roast, coconut oil, salt and poultry seasoning in the crockpot 6-7 hours on low and you are done!), kale, roasted parsnips and carrots, and roasted sweet potatoes from Moonshine Patio Grill. Looks like a ton of food and I’m proud to say I ate it all. I honestly get a little self-conscious sometimes when heating up my food at work because it just looks like so much. But I’m eating all healthy things that are so good for my body…I should not be ashamed!

Afternoon snack: Forgot to take a photo but I had an apple with some almond butter.

Brat Dinner

Dinner: Brats cooked in gluten-free hard apple cider/water combo then quickly seared on the grill pan, green beans with grass-fed butter, leftover roasted parsnips, butternut squash and carrots, avocado and Kombucha (cranberry I think?) from my fav local Austin vendor, Buddha’s Brew. I also had a very small piece of cheese from Antonelli’s Cheese Shop…not even sure what kind, but it was delicious.

Pumpkin Fudge

Dessert: Small piece of pumpkin fudge (recipe from PaleOMG).
