Kacie’s Story (Part 5)

One of my major hobbies is cooking and baking, especially for others. On most days, I would rather stay home and cook dinner with  my husband, family or friends as opposed to going out to dinner. Since it’s “Freebie Friday” I thought I’d share a few recipes that I enjoy and are healthy.

The picture on the right is for Southwestern Stuffed Peppers. It uses ground turkey, brown rice, corn and beans as a filling for colorful bell peppers.

A side dish that I love to make (maybe too much!) are baked sweet potato fries. Simply cut sweet potatoes, with the skin on, into small chunks or wedges. Place on a baking sheet coated with cooking spray in one layer. Drizzle with olive oil, salt, pepper and dried rosemary. Then bake in a 425 degree oven for about 30-40 minutes depending on how large you cut them. Check them about half way through and flip if needed. They are done when a fork can go in easily. I like to serve these with grilled chicken or fish and another vegetable side, like asparagus.

I love baking almost more than I love cooking. Cookies are so easy and are easily adaptable to healthier versions. I found a yummy looking oatmeal raisin cookie recipe here. Swap out the all-purpose flour for whole wheat flour for added nutrition.
